Honeydew, in fact, is a sugary substance secreted by some small insects that feed on tree sap. These insects are forced to eat enormous quantities of sap and, at the same time, eliminate excess water and sugars. Honeydew, actually a waste product of these insects, is however very rich in substances such as mineral salts and sugars and represents a useful source of nourishment for ants and bees. For the latter, honeydew is an important resource for their livelihood, especially in areas where nectar sources are scarce or in those periods of the year when the blooms have already ended. Once this precious sugary substance has been collected, the bees introduce it into the hive and transform it into honey. This is how honeydew honey was born, also known as forest honey. First of all, it is much less sweet than other honeys, as it has fewer sugars. The taste can be reminiscent of bark and leaves a bitter aftertaste in the mouth which can recall the flavor of soil. In some cases, such as fir honeydew honey, its flavor is attributed to that of caramel.
