Acacia honey is obtained from the pseudoacacia locust tree, a plant belonging to the Mimosaceae family, and for this reason it is also found under the name of black locust honey. It is from its flowers, when they are pollinated by bees, that this type of honey is obtained, with a vaguely floral scent and a sweet flavour. It is a single-flower honey, the type that is obtained when the hives are placed in an area where many plants of the same species grow, to ensure that the bees pollinate these in particular. On the contrary, wildflower honey is the result of hives located in an area with different varieties in which not a single species predominates. It is always very light in color, which also guarantees its purity. Sometimes it varies from straw yellow to amber and has the characteristic of practically never crystallizing, so it always has a liquid and syrupy consistency. Its scent is flowery and delicate, and its flavor is rather sweet but delicate, so it is well suited to cold preparations because it does not cover the other flavors. It does not contain gluten, so it is ideal for celiacs.
